Any other veggies or protein that would go well in this?

Good news is this recipe is super customizable! Go ahead and add anything else you want in there – sliced chicken sausages, spinach leaves, peas, etc!

I can’t find sun-dried tomatoes packed in oil. Will dried sun-dried tomatoes do the trick?

That should work – you’ll just need to add a bit more olive oil to the pan and the dish to bring all the flavors together well.

What kind of dry white wine do you suggest here?

Description

You are thisclose to enjoying Creamy Garlic Sun-Dried Tomato Pasta! Garlicky spirali noodles and tender sun-dried tomatoes in a creamy, luscious sauce with a heavy dusting of Parmesan cheese.


Ingredients

Units Scale
  • 8 ounces DeLallo spirali pasta (okay, you don’t have to use spirali, but it is SO FUN)
  • 2 cloves garlic, minced
  • 1/4 cup DeLallo sun-dried tomatoes packed in oil, sliced or chopped
  • about 1/3 cup dry white wine
  • 2/33/4 cup heavy cream
  • 1 cup spinach, chopped
  • up to 1/2 cup reserved pasta water
  • salt and pepper to taste
  • a big bunch of chopped chives or parsley
  • parmesan for serving

Instructions

  1. Cook the pasta: Cook the pasta according to package directions.
  2. Sauté the good stuff: Heat a skillet over medium heat. Use a little bit of the oil from the sun-dried tomatoes to sauté the garlic and sun-dried tomatoes until soft and fragrant, 2-3 minutes. 
  3. Make the sauce: Add the wine; let it sizzle out and reduce so the flavor gets real good. Add the cream and spinach; bring to a simmer. Season with salt and pepper. 
  4. Finish: Stir in the cooked pasta, adding the reserved pasta water as needed to help coat the noodles in the sauce. Finish with chives and Parmesan and a top-up on your glass of wine. SO GOOD.

    This recipe looked delicious. I did notice there were few flavor packing ingredients but decided to trust the process. Unfortunately, as suspected it had no flavor. I upped the cheese, added red pepper flakes, Italian seasoning, nutritional yeast. These did definitely help. I think if I were to try it again I would cook the noodles in broth and use some of that broth in final dish. That would add more flavor as well. Everyone’s tastes are different and some tweaking is usually needed. Thank you for sharing this recipe. It’s a good base that we cooks can adjust to our own wants and needs.

    I’m trying a week of SOS meals and this was our 3rd one. it was good. I felt like it could have used more of everything like sundried tomatoes, more garlic, more spinach. I did use about 3/4 cup heavy cream and it was just enough sauce. We added some chicken for protein. I will make again but will up the spices/flavors.

    This is a great weeknight dinner – it comes together very quickly. I added about 1/4 tsp of red pepper flakes when I sauteed the garlic and tomatoes. I also added maybe 1/2 tsp of salt; could have used a little more. Very versatile recipe – a lot you could do with this.

    Hello, I am currently making this and the recipe says 8 ounces of pasta but the video clearly shows you adding the whole bag of pasta which is 16 ounces. The rest of the ingredients seem a little off for only 8 ounces of pasta and I don’t see how that will feed four people either.

However, I feel the serving size of this recipe needs to be updated. I should have doubled it for my husband and I. It really only serves 2 people and we had very reasonable portions!
